Soak beans overnight

Pour off the water and transfer to a heavy iron pot or dutch oven equipped with a tight- fitting lid

Add salt and cold water

Bring slowly to a boil and keep boiling for 3 hours, being sure to add water if the level gets to low

Slice the salt pork into one inch cubes

Add pork .molasses, mustard and tomatoes

Cover and bake

If cooking on a campfire, a shovelful of coals should be kept on the lid

Bake all day or all night making sure there is a small amount of liquid on the top.

- 2/3 cup blackstrap molasses
- 1 rounded tablespoon salt
- 1 teaspoon dry mustard
