    Peel pears and chop finely in a food processor or put through a grinder by hand

    Chop onions very fine

  • 3

    Peel and seed the peppers and cut fine

  • 4

    Mix pears, onions, and peppers in a colander

  • 5

    Drain, but do not squeeze

  • 6

    Place in a deep enameled kettle

  • 7

    Add remaining ingredi- ents except cayenne. Place over low heat and bring to a slow boil, stirring occasionally

    Cook for 30 minutes, stirring from time to time

  • 9

    Remove from heat and add cayenne pepper to taste

    Seal in hot sterile pints

  • 11

    Process in boiling water bath 15 minutes

    Makes 12 pints.

ingredients

  • 12 good-sized hard pears
  • 4 cups onions
  • 4 cups green bell pepper
  • 1/2 cup jalapeno peppers
  • 4 cups sweet red bell peppers
  • 4 cups white sugar
  • 6 tablespoons powdered mustard
  • 2 tablespoons powdered turmeric
  • 5 tablespoons salt
  • 2 quarts apple cider vinegar
  • cayenne pepper to taste
