    Combine corn, pimento, lima beans, onion, and green pepper in a large mixing bowl. Combine salt, chili, and vinegar in another bowl. Slowly pour in oil, beating constantly. Pour dressing over corn mixture and toss thoroughly. Allow salad to marinate, covered, for at least 2 hours in the refrigerator before serving

  • 3 cups cooked fresh or frozen corn kernels
  • 1 /2 cup pimento, thinly sliced
  • 1 cup cooked lima beans
  • 3/4 cup chopped onion
  • 1-1/2 cups green pepper, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon ground red chili
  • 1/4 cup vinegar
  • 1/3 cup oil
