    To make dressing combine the lime juice, olive oil, gar- lic, and caribe

    Cut avocados in half, remove pit and skin

  • 3

    Then cut into 1-inch cubes

  • 4

    Place in a favorite pot- tery serving bowl or a food storage container and gently toss with the dressing so as not to break up the cubes of avocado. Rinse lettuce leaves and pat diy

    To serve, place a por- tion of the marinated avocado on two to three lettuce leaves on a chilled plate. If you make ahead, the avocado should be well sealed against oxidation-either by wrapping tight with plastic wrap, placing it carefully down against the avocados, or by sealing into plastic freezer or food storage containers

    It will keep at least a day

ingredients

  • 1/4 cup freshly squeezed lime juice
  • 3/4 cup extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon caribe (or other crushed dried red chile)
  • 3 ripe Haas or Fuerte avocados
  • 1 head red leaf or Boston lettuce
