Place water and tamarind in a medium saucepan

Cook over medium high, stirring constantly, until concentrate dissolves

Add mirin, soy sauce, sugar, ginger, garlic and red pepper flakes

Boil until mixture is reduced to 1-1/3 cups, about 15 minutes. Yield: 1-1/3 cups SUGGESTED USE: Remove part of this marinade and set aside to use as a dipping sauce

Tamarind Ginger Marinade
ingredients
- 1-1/2 cups water
- 3 tablespoons tamarind concentrate
- 1-1/4 cups mirin
- 2/3 cup soy sauce
- 1 /4 cup golden brown sugar
- 2 tablespoons minced fresh ginger
- 4 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes
