SESAME-FRIED DOVE

    Choose only young doves with white skin for frying

    Mix egg and milk

  • 3

    Place flour, salt, pepper, and sesame seeds in a brown paper bag

  • 4

    Shake birds in flour, then in egg and milk, then in flour again

  • 5

    Let the birds stand while the oil gets hot so that the batter will set

  • 6

    Deep-fry in oil at 375F

  • 7

    until golden brown

  • 8

    Serves 4.

  • 1 egg
  • 1/2 cup milk
  • 1 cup flour
  • 1 tablespoon salt
  • 1 tablespoon freshly cracked pepper
  • 4 tablespoons, sesame seeds
  • oil for deep-frying
