    Dredge venison in flour

  • 2

    In a large, heavy saucepan, saute venison until lightly browned

    Transfer to a plate

  • 4

    Saute onion, garlic and pepper in same pan until onion is slightly wilted. Return meat to pan with remaining ingredients

    Add enough water to cover venison and vegetables

  • 6

    Simmer for 3 hours or until tender

  • 7

    Makes 6 servings.

PUEBLO VENISON STEW

ingredients

  • 2 pounds venison, cut into l-inch cubes
  • flour
  • 1/4 cup lard or vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, peeled and minced
  • 1 medium-sized sweet green pepper,chopped
  • 1 cup dry corn kernels
  • 1 cup dry pinto beans
  • 1/2 cup pinon nuts, chopped
  • 1/4 cup sunflower seeds, shelled and crushed
  • 2 dried juniper berries, crushed
  • salt and pepper to taste
