Dredge venison in flour

In a large, heavy saucepan, saute meat in lard or other shortening until lightly browned

Transfer to a plate. Saute onion, garlic, and chili peppers in same pan until onion is slightly wilted. Return meat to pan with remaining ingredients

Add enough water to cover and simmer for 2-3 hours or until tender

CHILI VENISON
ingredients
- 2 pounds venison meat, cut into l-inch cubes flour
- 1/4 cup lard or vegetable shortening
- 1 large onion, chopped
- 2 cloves garlic, peeled and minced
- 2 4 -ounce cans of green chili peppers, sliced
- 4 medium-sized green tomatoes, cubed
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon oregano
