    Bring a large kettle of water to a boil

    Then remove ket- tle from fire

  • 3

    Drop the unskinned possum into the water until the surface hair can be easily pulled out

  • 4

    Remove possum from kettle and skin. Clean and cut into serving pieces

  • 5

    Roll pieces in flour seasoned with salt, pepper, and garlic

  • 6

    Melt 1/4 cup butter or margarine in a heavy iron skillet and brown meat pieces. Slice vegetables (onions, carrots, celery, potatoes) over meat pieces

  • 7

    Pour a cup of sour cream over the skillet contents

  • 8

    Cover skillet and bake in a 300F

  • 9

    oven for approximately 1-1/2 hours.
