Mix the sorghum, mustard, vinegar, pepper, paprika, and salt

Using a brush, coat the ribs with this mixture

Coat oven rack with Pam or other oil to prevent meat from sticking

Preheat oven to 475F

Place ribs on rack over a large, shallow pan of water to catch the drippings. Turn from time to time and spread with more of the sauce

Cook until the edges show crisp and the coating is brown

- mountain sheep, or elk ribs
- 1/2 cup sorghum molasses
- 1/2 teaspoon dry mustard
- 1/2 cup white wine vinegar
- 1/2 teaspoon course ground pepper
- 1 teaspoon paprika
- 2 teaspoons salt
