OYSTER SOUP

    Drain liquid from oysters into measuring cup and add water to make 1 cup liquid

    Heat this liquid in saucepan or kettle with another cup of water

  • 3

    Crush enough oys- ter crackers to produce 2 cup of fine crumbs, and stir them, along with butter, into hot liquid

  • 4

    When boiling starts, add oysters and simmer 1 to 2 minutes. Add milk, cream, mace, nutmeg, and pepper, and return just to boil

  • 5

    Remove from heat and ladle into bowls

  • 6

    Serve with side dish of oyster crackers

  • 7

    Makes six small servings.

  • oysters, two 8-ounce cans
  • oyster crackers
  • 1 tablespoon of butter,or margarine
  • 2 cups of milk
  • 1 cup of light or heavy cream
  • a pinch of ground mace
  • a pinch of ground nutmeg
  • a pinch ground pepper
