Place lime juice, orange juice concentrate, oil, achiote paste, bouillon, red onion, garlic, cilantro, oregano, cayenne, salt and pepper in the food processor or blender and puree until very thick and emulsified. Yield: 2 cups SUGGESTED USE: Achiote paste comes in a dry block at Mexican markets

- 1/2 cup fresh lime juice
- 1 (12-ounce) can orange juice concentrate, thawed
- 1/4 cup vegetable oil
- 3/4 cup achiote paste
- 2 tablespoons chicken bouillon
- 1/2 cup chopped red onion
- 4 cloves garlic, minced
- 1 /2 cup chopped fresh cilantro leaves
- 2 tablespoons dried oregano
- 1/8 teaspoon cayenne pepper
- 1 /2 teaspoon salt
- 1 /4 teaspoon freshly ground pepper
