Thinly slice bell peppers crosswise

Heat oil in a 12- quart pan over medium-high heat

Add bell peppers, onions, garlic, and cumin

Cook, stirring occasionally, until onions are soft (about 5 minutes)

Mix in tomatil- los (break up with a spoon) and their liquid, chilies, beans, pork, oregano, and red pepper. Bring to a boil

Reduce heat and simmer until pork is tender when pierced (1-1/2 to 2 hours)

For a thinner consistency cook covered

If you prefer a thicker dish, cook uncovered

Stir occasionally

Set aside a few cilantro leaves and chop remaining leaves

Stir in chopped cilantro and use reserved leaves for a garnish

PORK & WHITE BEANS WITH GREEN CHILI
ingredients
- 2 large green bell peppers, seeded
- 3 tablespoons vegetable oil
- 2 cups sliced green onions (including tops)
- 8 cloves garlic, minced or pressed
- 4 teaspoons ground cumin
- 6 cans (13 oz. each) tomatillos
- 4 cans (7 oz. each) diced green chilies
- 6 cans (15 oz. each) Italian white beans
- or 9 cups cooked small white beans
- 3 pounds boneless pork shoulder or butt
- 4 teaspoons dry oregano leaves
- 1/2 teaspoon cayenne pepper
- 1/2 cup lightly packed fresh cilantro leaves
