    Bring potatoes, tomatoes, and onions to a boil in 1 quart of water

    Reduce heat to low and simmer for an hour

  • 3

    Mix flour and oil, add green chilies, and stir into potato-tomato mixture

  • 4

    Stir in red chili, blending thor- oughly

  • 5

    Simmer for 20 minutes

  • 6

    Add cream and simmer 5 minutes longer

  • 7

    Makes 6 servings.

CREAM OF TOMATO/POTATO SOUP

ingredients

  • 2-1/2 cups potatoes, diced
  • 3 cups tomatoes, peeled, seeded, and cubed
  • 2 onions, sliced
  • 1-1/2 teaspoons flour
  • 2 tablespoons lard or vegetable oil
  • 3 green chilies, diced (4 ounce can)
  • 2 tablespoons ground red chili
  • 1/2 cup light cream
