Soak peas overnight

Put into Dutch oven in the morn- ing with enough water to cover

Add the onion, potatoes and salt pork

For campfire cooking, dig a hole deeper than the Dutch oven height, and fill partly with hot coals

Lower Dutch oven into hole and cover top with more coals ("between two fires")

Mound dirt around oven and partially over lid and coals

Let it cook throughout the day and by evening you will have a tasty meal

If cooking on a stove, the heat will be more concentrated and simmering time required will be only 2-1/2 to 3 hours.

- 2 cups dried, yellow split peas
- 1 medium onion studded with 2 whole cloves
- cold water
- 2 medium diced red potatoes
- 6 ounces salt pork
- black pepper and salt to taste
