Cut beef and pork into 1-1/2 inch cubes, saute chopped onions in margarine or butter and oil until gold- en

Add garlic and cook 3 to 4 minutes

Lightly dredge meat with flour, push the onions and garlic to one side of the pan and quickly sear the meat

Add salt, chili powder, oregano, cumin, tomato puree and wine

Cover and simmer for 1-1 /2 hours. Uncover and test

If the meat is not tender, cook another 20 minutes, or until quite tender, then add sesame seeds, chopped parsley, olives and unsweetened chocolate

Stir and simmer another 30 minutes

The chocolate acts as a binder that pulls the flavors together, and is a slight thickener. Taste before serving and be sure to add salt and chili powder as desired

- 2 large onions, chopped

- 1 cup white wine
- 2 tablespoons sesame seeds
- 2 tablespoons parsley, finely chopped
- 18 to 20 pitted or chopped ripe olives
- 1/2 ounce unsweetened chocolate
