Clean chicken and cut into pieces

Place in a kettle with water, celery, carrot, onion, salt and peppercorns

Bring to a boil, then reduce heat and simmer 15-20 min- utes and remove surface froth or scum. Let chicken simmer 2 hours or until meat is tender

If water boils away, add more. Combine dumpling ingredients until just moistened and drop by spoonfuls into the slowly boiling chicken broth

Cover kettle and let dumplings cook 12-15 min- utes

Place chicken pieces on a serving plate or platter and arrange dumplings around them.

- 4 to 6-pound stewing hen
- 4 cups water
- 2 stalks celery, chopped
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 carrot, chopped
- 1 medium onion, chopped
- 2 teaspoons salt
- 3 peppercorns
- DUMPLINGS
- 2/3 cup milk
- 1 tablespoon melted butter or margarine
- 1 tablespoon chopped parsley
