Crumble sausage into a wide frying pan

Cook over medium heat, stirring, until meat is browned

Drain off fat and remove from heat

Stir in croutons, onions, parsley, and eggs. Butterfly steak by slicing in half horizontally almost all the way through

Spread open and pound to 1/2 inch thickness

Spoon sausage mixture over half the steak

Fold ends in, roll to enclose, and tie securely with string. Heat oil in frying pan over medium-high heat; add meat and brown evenly on all sides

Transfer to an ungreased 2-quart baking dish and pour salsa over all. Cover and bake in a 375F oven until meat is tender when pierced (about 1-3/4 hours)

Skim and discard fat

Bake some carrots and onions at the same time and serve all together with sauce spooned on top

ingredients
- 3 chorizo sausages (about 3/4 lb. total),
- casings removed
- 1-1/2 cups unseasoned croutons
- 1/2 cup each chopped green onions(including tops)
- and parsley
- 2 lightly beaten eggs
- 1-1/2 to 2 pounds flank steak
- 3 tablespoons salad oil
- 1 jar (12 oz.) green chile salsa
