    Scald oysters in their juice with wine

  • 2

    Strain the oys- ters, finely chop, and add salt, cayenne pepper and mace

  • 3

    Add to liquid in which the oysters were cooked and boil for five minutes

  • 4

    Skim well and run through a sieve

  • 5

    When cold, bottle and seal.

  • 1 pint oysters with juice
  • 1 cup sherry wine
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon mace
