PICKLED OYSTERS

    Put the large oysters and their liquid into a pot, with enough water to just cover, and cook until they barely begin to boil

    Add a little salt

    Skim off the scum on top; then remove the oysters, and set them aside to cool

  • 4

    Add vinegar to the juice, the pepper without seeds, and the other spices

  • 5

    Heat this to a boil to release the flavor of the spices

  • 6

    Put the oysters in jars and pour the hot pickling juice over them

  • 7

    Cool and keep in the refrigera- tor

  • 8

    They will be ready to eat within two days and are delicious!

PICKLED OYSTERS

  • 100 large oysters
  • (ask for "counts" rather than the smaller "standards")
  • 1 tablespoon salt
  • 1 pint cider vinegar
  • 2 sticks cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1 teaspoon peppercorns 1 hot red pepper, fresh or dried
