Put the large oysters and their liquid into a pot, with enough water to just cover, and cook until they barely begin to boil

Add a little salt

Skim off the scum on top; then remove the oysters, and set them aside to cool

Add vinegar to the juice, the pepper without seeds, and the other spices

Heat this to a boil to release the flavor of the spices

Put the oysters in jars and pour the hot pickling juice over them

Cool and keep in the refrigera- tor

PICKLED OYSTERS
ingredients
- 100 large oysters
- (ask for "counts" rather than the smaller "standards")
- 1 tablespoon salt
- 1 pint cider vinegar
- 2 sticks cinnamon
- 1 teaspoon allspice
- 1/2 teaspoon cloves
- 1 teaspoon peppercorns 1 hot red pepper, fresh or dried
