Mix mint with salt and olive or vegetable oil and mash together to bring out the flavor of the mint

Fill the cavi- ty of trout with mint leaves

Wrap the trout with mint leaves and bind with one or two strips of bacon

Secure the bacon with a round toothpick

Broil until the bacon is cooked

To serve, remove the mint from the trout. The bacon and mint gives the trout a wonderful, mysti- cal herb flavor.
