Simmer fruits with double their weight of water along with ginger

Bone the two pork shoulders and soak them in the warm liquor from the dried fruit for 1/2 hour

Cut bread into bite-sized pieces and mix in a bowl with stuffing ingredients

Add enough water to just soak the bread

Lay stuffing on one opened shoulder and place the other over it

Skewer together, but do not roll

Steam for 1/2 hour in a hot oven then brown on higher heat

Thicken drippings with corn- starch, water and a little soy sauce for gravy.

ingredients
- 2 pork shoulders
- 1 apple
- 3/4 teaspoon salt
- 1 stalk celery
- 1 pound dried fruit (peaches, pears, apricots, apples)
- 1 powdered sage leaf
- 1 quart water
- 1/4 teaspoon thyme
- 1 teaspoon ginger
- 1/2 teaspoon salt
- 2 slices dry bread
- cornstarch
- soy sauce
- 1 onion, optional
