    Melt butter in a large heavy skillet, then add the pep- pers, onion, garlic, rice, oregano, and cumin

    Saute until the rice looks well glazed and is slightly golden. Add the chicken stock and bring to a boil

    Cover and simmer for 15 minutes

  • 4

    Remove lid, stir, and set lid ajar to allow to fluff for 5 minutes

  • 5

    Garnish with parsley.

  • 4 tablespoons sweet butter
  • 1 cup diced green bell pepper
  • 1 cup diced red bell pepper
  • 1 cup finely chopped Spanish onion
  • 4 garlic cloves, minced
  • 2 cups basmati rice
  • 1 /2 teaspoon ground oregano
  • 1 teaspoon ground cumin
  • 6 cups rich chicken stock
  • 2 tablespoons minced fresh parsley
