    Cut the fish into 4 individual servings

    Place the fish on one sheet of foil

    Drizzle with lemon juice

  • 4

    Squeeze spinach dry and divide evenly into quarters

  • 5

    Spread one part on each piece of fish

  • 6

    Sprinkle with Parmesan, then paprika and finally salt and pepper to taste. Top with the second sheet of foil and fold the edges over three times to seal the foil packet

    Rotate in the Flat Standard Basket for 15 minutes

  • 8

    Open packet and lift fish out onto plates; discard juices.

HEALTHY SPINACH PARMESAN FISH

  • 1 pound firm fish fillets
  • (like shark, halibut, sea bass or swordfish)
  • 1 tablespoon fresh lemon juice
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 2 tablespoons freshly grated Parmesan cheese
  • Paprika
  • Salt and pepper to taste
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
