Place salmon steaks in a shallow dish

Stir saffron into hot water and let stand 5 minutes

Stir saffron and water together with orange juice and zest, mustard, wine, oil, shallots, pepper and salt

Pour over salmon, cover and refrigerate for 1 hour. Remove salmon from marinade and rotate in the Flat Standard Basket for 15 to 20 minutes or until cooked through

SAFFRON-ORANGE SALMON STEAKS

- 4 small salmon steaks
- Pinch saffron threads
- 1 tablespoon very hot water
- 1/4 cup fresh orange juice
- 1 teaspoon minced orange zest
- 1/2 teaspoon Dijon mustard
- 1/3 cup sweet white wine
- 1 tablespoon vegetable oil
- 1 tablespoon minced shallots
- 1/2 teaspoon coarsely ground pepper
- 1/4 teaspoon salt
- 2 tablespoons minced fresh parsley
