    Place fish in a shallow dish

    Stir together basil, tomatoes with their juices, vinegar, olive oil, garlic, green onions and pepper and pour over fish

    Cover and refrigerate for 2 hours. Remove fish from marinade, reserving marinade

  • 4

    Rotate in the Flat Standard Basket for 15 minutes or until fish is cooked through. Meanwhile, pour marinade into a small saucepan and bring to a boil

  • 5

    Reduce heat and simmer for 10 minutes

  • 6

    Serve fish topped with tomato sauce and sprinkle with parsley.

ingredients

  • 6 (4 ounce) firm fish fillets
  • (like shark, halibut, sea bass or swordfish)
  • 1/3 cup chopped fresh basil leaves
  • 1 (14-1/2 ounce) can diced tomatoes, undrained
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons minced green onions
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons chopped Italian parsley
