Lay fish steaks in a shallow dish

In a bowl, combine wine, lemon juice and zest, and hot sauce

Stir in oil, garlic, fresh and dried herbs, salt and pepper

Pour over fish; cover and refrigerate 2 to 4 hours. Remove fish from marinade and rotate fish in the Flat Standard Basket for 15 to 20 minutes or until flaky.

- 1-1/2 cups dry white wine or vermouth
- 1/2 cup fresh lemon juice
- 1 tablespoon minced lemon zest
- 1/4 teaspoon hot sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 3 tablespoons mixed chopped fresh herbs
- (such as parsley, mint, cilantro, or basil)
- 1 teaspoon dried oregano
- 1 teaspoon chopped rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
