Whisk together the orange juice and rind, lime juice, chipotle, oil, garlic, cilantro, and salt

Trim all fat and silverskin from the pork and cut it lengthwise down the center to within 1/2-inch of the bottom; do not cut all the way through

Open pork and pound gently to flatten

Lay pork in a shallow dish and pour marinade over, turning to coat pork

Cover and refrigerate 4 to 6 hours

Remove pork from marinade, reserving marinade

Rotate in the Flat Standard Basket for 20 minutes or until cooked through

Wrap the corn tortillas in plastic and place in the Warming Tray while roasting the pork. Transfer reserved marinade to a small saucepan and bring to a boil

Reduce heat and simmer for 3 to 5 minutes

Slice pork into thin strips and serve in tortillas drizzled with sauce and filled with shredded lettuce.

- 1 pork tenderloin (about 1 pound)
- 4 corn tortillas
- 2 cups shredded lettuce
