Trim pork of all fat and silverskin

Cover and refrigerate 1 hour

Remove pork from marinade, reserving 1/3 cup marinade. Rotate pork, one on each spit rod, for 25 minutes or until the internal temperature reaches 155 to 160 degrees on the instant thermometer. Place flour in a medium saucepan and whisk in reserved marinade and water

Bring to a boil over medium heat and cook 3 minutes or until thickened, stirring constantly

HONEY BOURBON PORK TENDERLOIN

- 2 lean pork tenderloins (about 1-3/4 pounds total)
- 1/3 cup diced onion
- 1/3 cup fresh lemon juice
- 1/3 cup Bourbon
- 3 tablespoons honey
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon minced fresh ginger root
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 /4 teaspoon freshly ground pepper
- 2 tablespoons flour
- 3/4 cup water
