In a medium bowl stir together the lemon zest, garlic, lemon juice basil, mint, vinegar, oregano, olive oil and salt

Add the turkey breast, turning to coat

Cover and refrigerate for up to 4 hours, turning occasionally. Remove the turkey from the marinade and rotate on the spit rods for 40 minutes or until the internal temperature reaches 165 degrees in the center of the breast

Let the breast rest for 15 minutes before slicing.

- 2 teaspoons minced lemon zest
- 2 cloves garlic, minced
- 2/3 cup fresh lemon juice
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh mint
- 1/4 cup white wine vinegar
- 2 tablespoons chopped fresh oregano
- 1-1/2 tablespoons olive oil
- 1/4 teaspoon salt
