    Place the lemon juice, zest, white wine and vinegar in a medium bowl

    Slowly whisk in the oils

    Stir in Herbes de Provence, garlic, fresh rosemary, salt and pepper. Yield: 2 cups SUGGESTED USE: Herbes de Provence is an herb mixture that includes several dried herbs as well as dried lavender

    This marinade is perfect for tuna or other stronger fish fillets (2 to 3 hours).

Herbes de Provence Marinade

ingredients

  • 1/4 cup fresh lemon juice
  • 1 tablespoon grated lemon rind (zest)
  • 1 /4 cup dry white wine
  • 2 tablespoons sherry or cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup vegetable oil
  • 2 tablespoons Herbes de Provence
  • 3 cloves garlic, minced
  • 1 tablespoon fresh minced rosemary
  • 1 /2 teaspoon salt
  • 1 /2 teaspoon freshly ground pepper
