    Cut chicken into 1-inch cubes

    Whisk together the olive oil, lemon juice, water, dill and oregano

    Pour over the chicken; toss to coat well

    Cover and refrigerate up to 4 hours. Alternately thread the chicken, zucchini and peppers on the kebob skewers

    Rotate the kebobs for 25 to 30 minutes or until the chicken and vegetables are cooked through

  • 1-1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 2 tablespoons minced fresh dill, or
  • 1 teaspoon dried dill
  • 1 tablespoon minced fresh oregano, or
  • 1 teaspoon dried oregano
  • 1 zucchini cut into 3/4-inch rounds
  • 1 red bell pepper cut into 1-inch cubes
