Place lime juice, vegetable oil, chilies and cumin in the blender or food processor and puree until fairly smooth

Stir in the green onion and cilantro. Yield: 1 cup SUGGESTED USE: A whole chicken roasted after sitting in this marinade for 4 hours or so is the best

Trim chicken of all excess fat and loosen the skin over the breast and thigh areas using a chopstick

Pour some of the marinade under the skin and massage it over the breast and thigh area

Pour the remaining marinade over the chicken

Also try this marinade with boneless chicken breasts (1 to 2 hours), fish fillet (30 minutes) or shrimp (1 hour).
