    Spray scallops with vegetable cooking spray and sprinkle with chili powder and pepper

    Thread on kebob skewers and rotate 15 minutes or until scallops are opaque. To make dressing, whisk together all ingredients and set aside. Combine the cabbage,pepper strips,basil, cilantro and mint in a large bowl

    Add the dressing and toss well. Divide cabbage evenly among four serving plates

    Top with warm scallops and serve immediately.

SCALLOP AND CABBAGE SALAD

ingredients

  • 1-1/2 pounds sea scallops
  • Vegetable cooking spray
  • 2 teaspoons chili powder
  • 1 teaspoon freshly ground pepper
  • 8 cups coarsely chopped Chinese Napa cabbage
  • 2 cups red bell pepper strips
  • 1/2 cup finely chopped fresh basil
  • 1/2 cup minced fresh cilantro
  • 1/3 cup finely chopped fresh mint
  • DRESSING:
  • 1/2 cup fresh lime juice
  • 3 tablespoons sugar
  • 2 tablespoons finely chopped dry-roasted peanuts
  • 2 tablespoons fish sauce,
  • or 1 tablespoon low-sodium soy sauce
  • 1 teaspoon minced fresh ginger root
  • 2 cloves garlic, minced
  • 1 tablespoon minced serrano chili (optional)
