Set aside. Thread Shrimp on the kebob skewers and spray with vegetable cooking spray

- 4-1/2 cups finely shredded red cabbage
- 3 cups bean sprouts
- 2-1/2 cups shredded carrots
- 1/2 pound snow peas, cut into julienne strips
- 1 medium red bell pepper, cut into julienne strips
- 1/4 cup diagonally sliced green onions
- 2 pounds large raw shrimp, shelled and deveined
- Vegetable cooking spray
- PEANUT SAUCE:
- 1/2 cup soft tofu
- 1/3 cup canned chicken broth
- 1/4 cup low-sodium soy sauce
- 3 tablespoons balsamic vinegar
- 3 tablespoons dry sherry
- 3 tablespoons creamy peanut butter
- 2 cloves garlic, minced
- 1 tablespoon plus
- 1-1/2 teaspoons sugar
- 1 tablespoon minced fresh ginger root
- 1 teaspoon Oriental sesame oil
- 1/2 teaspoon crushed red pepper flakes
