Place cranberries, water and orange zest in a medium saucepan

Bring to a boil and then reduce heat and simmer until cranberries burst, stirring occasionally, about 10 minutes

Puree until smooth in food processor

Add vinegar, shallots, sugar, salt and pepper and blend well

Gradually whisk in oil

Cool completely. Yield: 1-1/2 cups SUGGESTED USE: This ruby red marinade is perfect on pork loin or pork tenderloin (8 to 24 hours)

It is also tasty for marinating chicken (6 to 8 hours).
Cranberry Marinade
ingredients
- 1 cup fresh or frozen cranberries
- 1/2 cup water
- 1-1/2 teaspoons grated orange rind (zest)
- 3 tablespoons red wine vinegar
- 2 tablespoons finely chopped shallots
- 1/2 cup golden brown sugar
- 2 teaspoons salt
- 1/2 teaspoon freshly ground pepper
- 1/4 cup vegetable oil
