    To make the dressing, combine all ingredients in a food processor or blender and puree

    Cover and refrigerate up to 3 days. Divide lettuce evenly among six plates

    Top with turkey, oranges, celery, and onion

    Drizzle dressing over all and serve immediately.

CRANBERRY TURKEY SALAD

ingredients

  • Cranberry Dressing:
  • 1 cup jellied cranberry sauce
  • 2 shallots, chopped
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons fresh orange juice
  • 4 tablespoons olive oil
  • 3 cups leftover roast turkey, cubed
  • 3 oranges, peeled and sliced
  • 2 celery stalks, sliced thin
  • 1/2 cup thinly sliced red onion
  • 12 cups mixed salad greens
