For marinade combine onion, Tequila, lime juice and olive oil

Pound the chicken breasts to an even thickness of 1/2 inch

Add to the marinade and refrigerate 30 minutes, turning occasionally

Remove chicken from marinade and rotate in the Flat Standard Basket for 15 to 20 minutes or until chicken is cooked through

Remove and cool

Cut chicken into 1/2-inch pieces

Combine chicken, mayonnaise, pine nuts, cilantro, Tequila, lime juice, salt and cayenne in a bowl; stir well

Place 1 cup lettuce on each serving plate and top each with 2/3 cup chicken mixture and 2 tomato wedges.

- 1/4 cup fresh lime juice

- 3/4 cup fat-free mayonnaise
- 2 tablespoons toasted pine nuts
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons Tequila
- 4 teaspoons fresh lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 6 cups torn iceberg lettuce
- 2 medium tomatoes, each cut into 6 wedges
- 1-1/2 pounds skinless boneless chicken breast halves
