In a large skillet, heat the oil until hot but not smoking over medium heat

Add the scallions and garlic and cook, stirring frequently, until the mixture is softened, about 2 minutes

Add the zucchini and bell pepper and cook, stirring frequently, until the pepper is tender, about 5 minutes

Transfer the vegetable mixture to a medium bowl, stir in the salsa and lime juice, and set aside

In the same pan lightly brown your sausage making sure it is cooked evenly on all sides

Remove and set aside

Add the rice to the pan, stirring to coat

Stir in the broth, oregano, thyme, and cayenne

Bring to a boil, reduce to a simmer, cover, and cook until the rice is almost tender and the liquid is absorbed, about 12 minutes. Return the vegetable mixture to the pan, stir well, and return to a boil over medium-high heat

Reduce to a simmer and return sausage to the pan, cover again, and cook until the rice and sausage are tender, about 9 minutes longer

Remove sausage and stir in the parsley

Arrange the rice with sausage on a large platter top with parsley and serve steaming hot.
Spicy Rice with Chicken Sausage and Vegetables
ingredients
- 2 teaspoons olive oil
- 1/4 cup thinly sliced scallions
- 3 cloves garlic, minced
- 1 zucchini, quartered lengthwise
- and cut into 1/2 inch thick slices
- 1 red bell pepper, diced
- 1-1/4 cups medium-hot prepared fresh salsa
- 1 tablespoon fresh lime juice
- 1 cup long-grain rice
- 2 cups no-fat chicken broth
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/8 teaspoon cayenne pepper
- 1/2 pound easy chicken fajita sausage,
- lightly browned (page 126)
- 2 tablespoons chopped fresh parsley
