Melt the butter in a medium-sized skillet and add the lemon juice, paprika, and cayenne

Saute the skewers gently until the cheese gets soft but does not melt

Skewered Sausage Squares
ingredients
- 1/2 pound American beef sausage cut into
- half inch cubes and browned (page 59)
- 1/2 pound Swiss or mozzarella
- cheese cut into half inch cubes
- 1/2 stick butter or margarine
- 1 teaspoon lemon juice
- 1 teaspoon paprika
- dash of cayenne
- toothpicks (approximately 20)
