Heat the olive oil in a heavy soup pot

Put in the sausage and cook over medium heat for 4 to 5 minutes, breaking it up as it cooks

Remove the sausage with a slotted spoon and set aside

Add the onions to the fat in the pot and cook over medium heat until totally translucent, about 10 minutes

Add the beef stock, rice, and tomatoes. Bring to a boil, reduce heat, and simmer, for 20 to 25 minutes or until the rice is tender

Return the sausage to the pot and cook for 5 minutes more

Taste for salt and pepper

Ladle the soup into bowls and sprinkle with lots of Parmesan cheese and a little parsley.

ingredients
- 1 tablespoon olive oil
- 1 pound Italian Turkey sausage
- with sun-dried tomatoes
- 3 cups diced onions
- 2 quarts beef stock, preferably homemade
- 1 cup uncooked rice
- 2 cups chopped fresh or canned Italian-
- style tomatoes, drained
- salt
- freshly ground black pepper to taste
- 2 cups freshly grated Parmesan cheese
- Chopped fresh parsley for garnish
