    Melt the butter in a Dutch oven or casserole

    Add the onions and pork; cook over medium heat until browned

    Add all the remaining ingredients; mix well, cover, and bake in a 325F

    oven for 2 1/2 hours

    Taste for seasoning.

Bigos (Polish Peasant Stew)

ingredients

  • 2 tablespoons butter
  • 1 cup chopped onions
  • 2 pounds boneless pork, cut in l-inch cubes
  • 1 pound French garlic sausage (page 55)
  • 3 cups shredded cabbage
  • 1 pound sauerkraut
  • 1/2 pound mushrooms, sliced
  • 2 cooking apples, peeled and sliced
  • 3 tablespoons apricot jam
  • 1 8-ounce can tomato sauce
  • 1 cup beef broth
  • 3/4 cup dry red wine
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 clove garlic, minced
  • 1 bay leaf
