Cut each sausage crosswise into 4 pieces; cook until browned in a large skillet

Remove the sausages

Drain all but 2 tablespoons of fat

To the fat remaining add the onions and green peppers; saute 5 minutes

Blend in the flour

Add the tomatoes, corn, bay leaf, thyme, salt, and Tabasco

Cook over low heat 20 minutes

Return the sausages to skillet and cook 5 minutes longer.

ingredients
- 1 pound spicy Creole sausage
- 1 cup chopped onions
- 1/2 cup chopped green peppers
- 2 tablespoons flour
- 1 29-ounce can tomatoes
- 2 cups cooked or canned whole kernel corn
- 1 bay leaf
- 1/2 teaspoon thyme
- 1-1/4 teaspoons salt
- Dash Tabasco
