    In salted water, boil the potatoes until almost tender

  • 2

    Saute sausage lightly in a small skillet and set aside

  • 3

    While the potatoes are cooking take some pie crust dough and line a pie tin with it, reserving some of the dough for the topping

  • 4

    Place sausage lengths into the pie

  • 5

    Sprinkle with parsley and a small pinch of freshly ground black pepper

  • 6

    Layer the potatoes over the sausage

  • 7

    Sprinkle a few drops of water over the mixture before the lid of crust is set on

  • 8

    Bake in 450F

  • 9

    oven for 20 minutes.

  • 1-1/2 pounds potatoes cut into chunks
  • 1 pie crust dough recipe for covered pie
  • 12 to 14 1-inch lengths of Italian
  • citrus cheese sausage (page 31)
  • fresh parsley
  • freshly ground black pepper
