In salted water, boil the potatoes until almost tender

Saute sausage lightly in a small skillet and set aside

While the potatoes are cooking take some pie crust dough and line a pie tin with it, reserving some of the dough for the topping

Place sausage lengths into the pie

Sprinkle with parsley and a small pinch of freshly ground black pepper

Layer the potatoes over the sausage

Sprinkle a few drops of water over the mixture before the lid of crust is set on

Bake in 450F

oven for 20 minutes.

- 1-1/2 pounds potatoes cut into chunks
- 1 pie crust dough recipe for covered pie
- 12 to 14 1-inch lengths of Italian
- citrus cheese sausage (page 31)
- fresh parsley
- freshly ground black pepper
