Cranberry Sausage Casserole
ingredients
- 2 cups fresh cranberries
- 1 cup granulated broum sugar
- 4-5 sweet potatoes
- 1/2 cup water
- 2 pounds Greek pork sausage with
- orange and red wine (page47)

Preheat the oven to 350F

Boil sweet potatoes

Allow them to cool, then peel and slice them and set aside

Wash cranberries

Put the cranberries and granulated brown sugar into a large casserole and mix well

Add water to the cranberry brown sugar mixture, and put the sweet potato slices over the berries

Place sausage links on top

Salt and pepper liberally

Cover and bake for 1-1/2 hours

Remover cover and continue to bake until the sausages are brown all over

Turn them occasionally, if you wish, trying not to prick them

Use a wooden spoon.
