    The sausage should be precooked in about 1/2 cupful of water for about fifteen minutes

    Break the sausage with a fork as it cooks

    Drain off excess fat

  • 4

    Combine all the other ingredients with the sausage and turn into a 1-1/2 quart casserole

    Cover and bake in a 325?F

  • 6

    oven about one hour, or until the potatoes are tender.

  • 1 pound loose fresh sage
  • breakfast sausage (page 26)
  • 5 medium-sized potatoes
  • 1 small onion chopped
  • 1/4 teaspoon oregano
  • salt to taste freshly ground black pepper
