Brown the sausage in a large skillet

Add the apples and cook until tender

Drain off the excess grease and stir in the apple jelly

Remove from heat and keep warm

Mix together the eggs, milk, and butter or oil in a mixing bowl

Sift in the flour, baking powder, and salt

Use a whisk to beat the mixture until it is smooth and free of lumps

Make the pancakes on a lightly oiled griddle

As soon as each one is done, top with a sausage and some of the apple/jelly mixture, then roll up

Serve immediately with maple syrup.

ingredients
- 1 pound bourbon and brown sugar
- pork sausage (page 42)
- 2 large apples, peeled, cored,
- and chopped coarsely
- 1/2 cup apple jelly
- 2 eggs, well beaten
- 1-1/2 cups milk
- 2 tablespoons melted butter
- or vegetable oil
- 2 cups sifted all-purpose flour
- 3 teaspoons baking powder
