Breakfast Sausage with Crepes
ingredients
- 16 crepes (see recipe on opposite page)
- 1 pound Italian citrus cheese
- sausage (page 31)
- Maple syrup

Prepare the crepes and keep them warm

Saute the sausage in a skillet until it is well browned. Remove it with a slotted spoon and keep it warm

Layer the crepes and sausage on individual plates

(Plan on stacking at least three or four crepes per person.) Pass the maple syrup at the table.
