Country-Style Sausage and Eggs
ingredients
- 1/4 pound country farm sausage (page 27)
- 2 eggs, well beaten
- 1 tablespoon milk
- 1 teaspoon freshly snipped chives
- 1 tablespoon grated Parmesan cheese
- salt and freshly ground black pepper to taste

Cut sausages into bite-sized pieces

Saute the sausage until it is browned, about ten minutes

Drain off most of the grease

In a mixing bowl combine the eggs, milk, chives, cheese, salt and pepper

Mix well

Over medium heat, pour the scrambled egg mixture into the skillet with the sausage, stirring constantly until the eggs are set.
