Sausage, Chicken Livers and Eggs

ingredients

  • 1/2 pound chutney raisin sausage (page 89)
  • 1 tablespoon butter
  • 1/2 pound fresh chicken livers, rinsed, dried,
  • and coarsely chopped
  • 1 tablespoon chopped fresh chives
  • 8 eggs, well beaten
  • salt and freshly ground black pepper to taste

    Saute the sausage until it is brown, about ten minutes

    Remove it with a slotted spoon, cut into bite-sized pieces and set aside

  • 3

    Discard the drippings

  • 4

    Add the butter to the skillet and saute the chopped chicken livers four or five minutes

    Return the sausage to the skillet

  • 6

    Add chives and eggs, add salt and pepper to taste

  • 7

    Stir constantly over medium heat until the eggs are fluffy and well scrambled. Serves 4.
